We are a small family run preserves company based in the wonderful rolling countryside on the Essex/Suffolk border.

Libby and her husband, Ted, started growing, picking and preserving when Libby could no longer work as a management consultant due to illness. It reawakened a passion kindled in her as a child, brought up on a smallholding in Wales, being taught to cook by her mother whilst standing on a chair at the Aga. Time spent with Ted’s family on the remote, mountainous sheep farm in South Africa taught her different preserving techniques and how to make the best of what is seasonal and around us. Many of us have lost this skill since the advent of air freight and supermarkets ensured that fruit and vegetables are no longer seasonal and as a result food has often lost its flavour.

We seek to reawaken the love of local preserves by using our wonderful seasonal local produce.

Fruit grown in season has more flavour and if used when as fresh as possible that flavour is preserved. This is why we use home grown or locally produced and foraged fresh ingredients whenever possible, resorting to local markets for citrus and exotic fruits only. This means that we don’t need to use additives and flavour enhancers. We do not use sprays or chemicals in our garden and only use fruit from other sources which also do not use chemicals.

We have such wonderful fruit in this area, why use ingredients which are flown in? For example, we have found that our Rosehip and Crabapple Jelly is a brilliant, healthy and local alternative to Cranberry Jelly with poultry or pork at Christmas.

We still use maslin pans and make small batches to ensure a high quality – so we are definitely a member of the slow food movement. We use what is around us, so if there is a glut of anything, we come up with new flavour ideas. This means that our product list is changing all the time both as we are seasonal and as new flavours come in and run out.

You can find us at local Farmers Markets, Farm Shops, Delicatessens and events or we welcome callers by appointment.

    I am the Chairman of the Bedfield & Monk Soham Garden Club and I am currently putting together the programme for 2015. I would like to enquire if you would be prepared to hold a demonstration on Jam and preserve making sometime in the year, and also the cost? We meet on the third Friday of each month from Feb – Nov

      Sorry for the late reply, its been a busy marmalade season.

      I’d love to come and speak to your group, but is it not a bit far? I’m in north Essex and would need to cover both time out of the kitchen and transport as well as a small fee for the talk. What sort of fee are you eilling to oau to cover this and also what time of year were younthinking about?

    I had some of your Raspberry Vinegar in the summer when you were at Lathcoats Farm, and have been getting it from there since,unfortunately they now don’t have any, is that because they are not in season yet?
    I do so love it ,and would be interested to know when it will be available again.

      Jenny, I’m glad you like it. Lathcoats should have some now, but if not, we always have it on the stall (look on website for where we are) or you are welcome to come to us at the house. Libby

    It is with great sadness that I have to tell you that Libby passed away on 24th December. She was diagnosed with cancer in November 2016, but must have had it for some considerable time before that.

    She fought really hard last year, putting up with the most unbelievable problems, yet despite all that still won the Best Producer category in the Essex Life Food and Drink Awards. Even to the very end though she never complained and never showed any fear of what she faced.

    We are planning to keep The Jam Shed going, albeit on a smaller scale. We don’t plan to do the regular Farmers’ Markets, but hope to keep 3 outlets supplied:
    – Spencers Farm Shop in Wickam St Paul
    – Fergusons Deli in Hadleigh
    – Rougham Hall Nurseries in Bury St Edmunds.

    If things go really well we may even be brave enough to sign up for one or two of the Agricultural Shows or Food and Drink Fairs this year. Fingers crossed, as they were so much fun.

    In addition you are all welcome to come to the house in Great Maplestead. We may be out of stock of some items at times, but let’s hope for the best and do as much as we can to keep her legacy alive. If a buyer for The Jam Shed comes along then that would be a great way to ensure its future.

    Well I must say we have been having more success making Libby’s produce than I expected !
    It has been a bit of a magical mystery tour, but I have to say that having now made quite a number of her preserves I have become aware of just how good they are.
    We are supplying the three outlets I listed in the previous message, and have also had The Jam Shed stall with a full range of products at the Sudbury and Bures Farmers Markets !
    The Jam Shed will be at the Sudbury Farmers Market in St Peters church on Friday 27th April. Denise may be running the stall, but it will be business as usual.
    We will also be at the South Suffolk Show, and Tastes of Sudbury in the next couple of months.

    Keep an eye on the website under Home, where I will post info on where we will be from week to week.
    I won’t be out every weekend, as cooking capacity can’t keep up, but I’ll do my best to keep it up to date. Don’t forget that you’re always welcome to visit us in Great Maplestead.

    Hi Ted,
    We met at last Friday’s Sudbury farmers’ Market when I brought you a bag of our quinces. Really good to find out more about you and The Jam Shed. I admire your courage for carrying on after losing your chief jam-maker, Libby, and wish you every success.
    We still have a HUGE glut of quinces, if you would like any more. As I said, we don’t want to sell them, but a small donation to Parkinson’s UK would be much appreciated, as our local branch are always looking for fund-raising ideas. Please let me know if you would like me to bring you more quinces; we live just outside Middleton, on the road to the Henny Swan pub, so not far for us to find you in Maplestead. If not (or if you would like more at the end of the month), I’ll see you at St. Peter’s at the end of November.
